GMP Improvements

Good Manufacturing Practices (GMP’s) are an important requirement throughout food manufacturing and aim at establishing; handling, processing, storage and distribution procedures to prevent contamination by micro-organisms and the growth of pathogens.

Considerations include the requirements for:

  • Design and conditions of factories, facilities and equipment
  • The control of operations, temperatures, raw material, water supply waste etc.
  • Maintenance, cleaning and sanitation
  • Personal hygiene and operator cleanliness and appropriateness for food handling

The objectives of GMP’s are to control the manufacturing process such that food safety and quality requirements of the product are not compromised.

GMP’s were originally advocated by the U.S. Food and Drug Administration (FDA) and are coupled with Standard Operating Procedures (SOP’s) for controlling production. GMP’s also tend to be coupled with Pre-requisite Programmes (PRP’s), which give detailed guidelines for satisfying requirements of aspects of food safe manufacturing, like pest control, equipment suitability for maintenance and cleaning etc. There is sometimes and overlap between GMP’s and PRP’s but they are necessary foundations for a successful HACCP system.
