Course Overview

Food companies in Barbados & the Caribbean have long since been required to ensure their plant & equipment is clean and there is some level of sanitation practices. As food companies implement food safety standards such as HACCP (Hazard Analysis Critical Control Points), there are specific requirements in relation to cleaning and sanitation. These include ensuring that food processing equipment and the food processing environments are maintained in a hygienic condition and that these programmes are monitored for suitability and effectiveness.

It is important that all personnel, in house or contractors realise that all parts of the establishment and equipment are cleaned and sanitised to a defined and organised schedule and they cover; specified food contact surfaces and non-food contact surfaces, responsibilities, methods and frequencies, monitoring and inspections.

If cleaning and sanitation personnel do not fully understand these requirements and effectively implement them it could mean the failure of plant hygiene audits by; clients, legislative authorities, or food safety certifying organisations.

This training will equip participants with the knowledge and tools to enable them to competently undertake cleaning and sanitation according to company procedures to the needs of good manufacturing practices and satisfy food safety requirements.
