Coconut Court Beach Hotel in Barbados is popular all year round with visitors from the UK, Europe and North America. As part of a strategic move to upgrade their establishment the General Manager and Executive Chef wanted to strengthen and formalize the hotel’s food safety practices. They selected C&G International to assist them in this process.
Following a review of the facility, C&G International worked with the Coconut Court Food Safety Team, which included the Executive Chef, to upgrade every area of the hotel which related to food safety.
It included; stores, goods receiving, kitchen processes, temperature records, personnel hygiene etc etc.
At the end of the programme, which included training for all food handlers, Coconut Court Hotel has a bespoke Food Safety Manual which includes Standard Operating Procedures (SOPs), Good Hygiene Practices (GHPs), forms and records that indicate how well the system is functioning.
Since undertaking the food safety programme Coconut Court hotel is now in a far stronger position to meet the ever more stringent requirements of the international tour operators. The hotel can now readily provide detailed proof of food safety control measures which ensure that food and beverages prepared for hotel guests are food safe.
